
There was a time when spices were the motivating factor behind global exploration and colonialism, as they generated huge revenues for the countries and corporations that controlled their distribution. Many of these spices were, at the time, quite expensive and out of the reach of the average citizen. Fortunately, gourmet spices today can be purchased in just about any supermarket in the country for just a few dollars.
There are hundreds of different gourmet spices that are sold throughout the world. Most of the foods that are common to a region are defined, at least in part, by their use of spices that are endemic to that particular part of the world, giving the food its distinctive characteristic.
